Method of making

This is an easy snack recipe that you can make in minutes. To make it, first take out all purpose flour in a big bowl. Then add baking powder, baking soda, sugar, milk, curd and mix well.

Add water as required and knead smooth dough. Add 2 teaspoons of oil to the flour and cover it with a light wet cloth. Keep it aside for an hour. On the other side, heat oil in a pan and add mustard seeds and cumin seeds and fry it lightly.




Next, add onion, tomato, salt, ginger, green chili, capsicum, black pepper powder and fry for a few minutes. Mix the mixture well and keep it to cool.

Once the mixture cools down, add grated paneer, add a little spice powder and mango powder to it. Mix it well and then add tomato ketchup, chopped coriander and salt.

Now apply some oil on your palms and take a dough ball and roll it small. If necessary, add a little dry flour to it while rolling to keep it from sticking. Take 1 tbsp of cheese mixture and keep it in the center.

Seal all sides of dough circles. Apply some oil on each ball and set it aside for 15 minutes. Now, press it gently and level its surface from both sides. Use a rolling pin to roll it like a paratha, but avoid putting too much pressure.

Heat the griddle on medium heat. Pour the Kulcha over it and cook it on medium flame with a little ghee. Cook on both sides until golden and crisp. Then cut it and serve hot with ketchup or green chutney.

Content
For flour
Refined flour – 2 cups
Baking Powder – 1/2 teaspoon
Baking soda – 1/4 teaspoon
Milk – 1/2 cup
Curd – 1 tbsp
Oil – As required
Salt – 1/2 teaspoon
Sugar – 1 teaspoon
For stuffing
Coriander leaves – 1 teaspoon
Finely chopped capsicum – 1/4 cup
Chopped Green Chillies – 2
Mustard seeds – 1 teaspoon
Rice Bran Oil – 1 Tbsp
Ground black pepper – 1/2 teaspoon
Tomato Ketchup – 2 Tbsp
Ghee – 2 tbsp
Cumin seeds – 1 teaspoon
Chaat Masala Powder – 1/2 teaspoon
Mango powder – 1/4 tbsp
Salt – As required
Green chutney – 1 teaspoon
Grated Paneer – 200 grams
Chopped ginger – 1 small spoon
Chopped Tomatoes – 1/4 cup
Chopped Onion – 1/2 cup

Method
Step 1
Take out all purpose flour in a big bowl, add baking powder, baking soda, sugar, milk, curd and mix it well.

Add water as required and knead smooth dough.
Step 3
On the other side heat the oil in a pan and mix all the spices and keep it to cool down.

Step 4
When the mixture cools, add grated paneer, masala powder and mango powder.
Step 5
Now take a ball of dough and roll it small and take the mixture of paneer and keep it in the center.
Step 6
Seal all the sides of the dough circles and roll them like a paratha using a rolling pin.
Step 7
Cook it on medium flame using a little ghee.
Step 8
Cook on both sides until golden and crisp. Then cut it and serve hot with ketchup or green chutney.
