This option will appear next to the caption bar when you send the photo.

View Once feature of WhatsApp can also be used for videos and GIFs apart from photos. If you are a beta user, then this feature of WhatsApp will be visible to you while sharing photos while chatting. To use this feature, you will need to update your WhatsApp beta version number to 2.21.14.3.
